Professor of Physiology at the National Veterinary School of Toulouse (ENVT), Véronique Gayrard initially trained as an agricultural engineer at the National School of Agronomy of Toulouse (1986-1989).
After earning a master's degree in Neuroscience, she completed her doctorate at the INRA Reproductive Physiology Station in Nouzilly. She then joined the ENVT for a postdoctoral fellowship (1993-1996) and has been a member of the veterinary school's teaching staff since 1996. After several years (1996-2006) focused on the study of endocrine disorders associated with prion diseases, her team undertook a thematic mobility to focus on issues related to endocrine disruptors and joined the UMR 1331 INRAE ​​Toxalim. Since 2021, Véronique Gayrard has been Deputy Director of the SEVAB doctoral school.
